It depends what you refer to. It seems that mailed protection were used from the 12th century. However due to their huge cost and weight for the animal, they weren't often use and only the most wealthy knights could afford such equipement.
If you refer to bards, they seem to not have been in use before the 13th century (around 1240 apparently???). They didn't have any coat of arms at the beginning. These appeared progressively during the 2nd half of the 13th century.

That's what I thought I knew. It would therefore be logical to remove the bards from the general's bodyguards during the first part of the game. Perhaps we could distinguish this elite unit by creating horses a little better equipped than those of other knights ?
The logic would be to keep them only for the late bodyguards and leave the early one without. But we unfortunately can not do that all units using barded mounts

I have my idea about this : create several export_descr_units files; a 12th century file, a 13th century file ... etc
but the player will have to swap these files manually.
You probably can't change the horse's armor while you can upgrade the armor of the riders.
