I tend to agree. I haven't gotten to the gunpowder units as Rum yet, but the experience of playing with Muslim armies has been mostly relying on massive amounts of tribal horse archers and charging with the general bodyguard. While it is possible to utilize some of the infanty and heavy cavalry/feudal horse archers, they take a long time to become available and a long time to recruit. When you do use them, it is pretty much a given that they will take massive casualties which is a problem since their numbers are so low also. Frankly, I don't actually know how these armies worked in these times, but on a gameplay level it is a bit dull when you know that utilizing most of your roster is a bad investment of time and gold.
